Recipe: Mint Blossoms

This weekend was so much FUN! We went Christmas shopping for a few family members. We went to Stein Mart and Gander Mountain to find my future sister-in-law a jacket, my cousins, some pajamas.


Tonight, we made COOKIES!! I think nothing says Christmas like cookies.


             

My mom and I decided to make mint chocolate cookies and Blossoms. 





 What You Will Need:

1 bag of mint chips(I used Andes)

1/2 cup Butter

1/3 cup Milk

1tsp. Baking Powder

1/2 cup Brown Sugar

2/3 cup of Cocoa

1 1/4 cups Flour

1/2 tsp. Salt

1 1/2 tsp Vanilla

1/2 cup White sugar

Directions: Preheat the oven to 325 degrees and line baking sheets.

Whisk together flour, salt, baking powder, and cocoa and set aside. Beat the butter on medium high until light and add sugars, creaming well. Add the vanilla and beat until smooth.Add the flour in two batches, alternately with milk in one batch, mixing well. Stir in the mint chips. Chill dough for at least 15 minutes.

Scoop the dough on a cookie sheet. Press down on them slightly and bake for 14-15 minutes. Let the cookies cool and then they're ready to SERVE!! These are delicious if you love mint like I do!! 


Back when I was little girl my mom used to make these next cookies. I LOVE THEM. They are peanut butter blossoms. 


What You'll Need:

1 cup Shortening

1 Cup Peanut Butter (We used Jif)

1 Cup packed Brown Sugar

1 Cup White Sugar

2 Eggs

1/4 cup milk

2 teaspoons Vanilla extract

3 1/2 cups all purpose flour

2 teaspoons baking Soda

1 teaspoon salt 

1/2 cup of sugar for decoration

2 (9 ounce) bags of milk chocolate kisses, unwrapped


Directions: Preheat oven to 375. Line baking sheet with parchment paper. 

In a large bowl, cream together shortening, peanut butter, brown sugar, and 1 cup white sugar until smooth. Add the eggs in one at a time, beating until fully incorporated. Mix in milk and vanilla. 

In a large bowl, combine flour, baking soda, and salt. Gradually add to the peanut butter mixture until well blended. 

Shape tablespoonfuls of dough into balls, and roll in remaining sugar

Bake in oven 10-12 minutes Remove from and immediately put the kiss into each cookie. ENJOY!
